Malva Pudding

Method:

    1. Preheat the Oven: Start by preheating your oven to 160°C (320°F). This ensures that the oven is at the right temperature to bake the pudding evenly.
    2. Prepare the Wet Ingredients: In a mixing bowl, beat together the 1 cup of caster sugar, 2 eggs, 1 teaspoon of vanilla extract, and 2 tablespoons of butter. Use an electric mixer or a whisk to mix until the ingredients form a light, creamy consistency. The mixture should be pale and smooth, which will contribute to the fluffy texture of the pudding.
    3. Incorporate the Milk and Vinegar: Once the sugar and eggs have been well combined, add the 1 cup of milk and 2 teaspoons of vinegar to the mixture. Stir everything together until fully combined. The vinegar helps activate the baking soda, ensuring the pudding rises properly.
    4. Sift the Dry Ingredients: In a separate bowl, sift together the 1 cup of flour, 2 teaspoons of bicarbonate of soda, and 1/2 teaspoon of salt. Sifting helps to evenly distribute the dry ingredients and prevents any lumps in the batter.
    5. Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients, stirring gently as you go. Mix until the batter is smooth and well combined. Take care not to overmix, as this could lead to a denser pudding.
    6. Prepare for Baking: Lightly grease an ovenproof dish with butter or non-stick spray. Pour the prepared batter into the dish, spreading it evenly. Place the dish in the preheated oven and bake for about 25 minutes, or until the pudding is golden brown on top and a toothpick inserted into the center comes out clean. The pudding should be soft and slightly spongy to the touch.
