1. Whip the cream
In a cold bowl, beat heavy cream until stiff peaks form. Set aside.
2. Make the cheesecake base
In a separate bowl, beat softened cream cheese until smooth.
Add sweetener + vanilla + cherry gelatin powder.
Mix until creamy and fluffy.
3. Fold it all together
Gently fold the whipped cream into the cherry cheesecake mixture until fully combined and silky.
4. Chill & serve
Spoon into dessert glasses, chill 20–30 minutes, and top with a cherry (optional but stunning).
