- Prepare the Dough: In a microwave-safe bowl, melt ¼ cup cream cheese and 2 cups shredded mozzarella in 30-second bursts, stirring until smooth and creamy.
- Mix the Dough: To the melted cheese, mix in 1½ cups almond flour, 1 tsp baking powder, 2 eggs, and ½ cup shredded sharp cheddar cheese. Stir until a dough forms. If you like some heat, fold in 1–2 diced jalapeños (seeds removed for a milder flavor).
- Shape the Rolls: Once the dough is mixed, pinch off small portions and roll into 12 equal-sized balls. Place them on a parchment-lined baking sheet or silicone mat for easy cleanup.
- Brush with Egg: Brush the tops of the rolls with a beaten egg for a golden finish and a slight shine.
- Bake: Bake the rolls at 350°F (175°C) for 25 minutes or until golden and slightly crisp on top. The rolls should be soft on the inside and firm on the outside.
- Serve: Let the rolls cool slightly before serving. These are perfect alongside chili, soups, or as a delicious snack on their own. For added flavor, dip them in ranch dressing!
