- Preheat the oven: Set your oven to 356°F (180°C). Line a baking sheet with parchment paper.
- Cream butter and sugar: In a medium bowl, use a hand mixer or spoon to cream together the softened butter and sugar until light, pale, and fluffy.
- Add dry ingredients: Add the flour, vanilla powder (or extract), and baking powder to the creamed mixture. Stir until mostly combined.
- Add honey: Pour in the honey (or golden syrup) and stir gently until the dough comes together and is evenly mixed.
- Shape the dough: Divide the dough into 3 equal portions. Roll each into a long rope/log and place on the prepared baking sheet, spacing well apart.
- Flatten: Use your finger or the back of a spoon to gently press each roll to slightly flatten the tops.
- Bake: Bake for 12ā14 minutes or until golden brown and slightly crisp on the edges.
- Slice while warm: Immediately after removing from the oven, carefully slice the rolls diagonally into cookies using a sharp knife.
- Cool: Allow the cookies to cool completely on the baking sheetāthey will firm up as they cool.
