Homemade Blueberry Butter

Directions:

  1. In a small saucepan over medium heat, combine the blueberries and honey.
  2. Cook for 8–10 minutes, stirring occasionally, until the blueberries burst and release their juices.
  3. Remove from heat and let cool for 5–10 minutes.
  4. Transfer the mixture to a bowl. Mash with a fork or briefly blend with an immersion blender until mostly smooth but slightly chunky.
  5. Add softened butter and lemon juice. Stir until fully combined and smooth.
  6. Transfer to an airtight container or jar.
  7. Refrigerate for 2–3 hours to firm up before serving.
  8. Enjoy on toast, pancakes, muffins, or waffles!

Storage:

Keep refrigerated in a sealed container for up to 2 weeks.
