Directions:
- In a small saucepan over medium heat, combine the blueberries and honey.
- Cook for 8–10 minutes, stirring occasionally, until the blueberries burst and release their juices.
- Remove from heat and let cool for 5–10 minutes.
- Transfer the mixture to a bowl. Mash with a fork or briefly blend with an immersion blender until mostly smooth but slightly chunky.
- Add softened butter and lemon juice. Stir until fully combined and smooth.
- Transfer to an airtight container or jar.
- Refrigerate for 2–3 hours to firm up before serving.
- Enjoy on toast, pancakes, muffins, or waffles!
