👩‍🍳 Steps

1️⃣ Make the Marinade

  1. In a medium bowl, whisk together teriyaki sauce, pineapple juice, brown sugar, ketchup, soy sauce, ginger, and garlic until well combined.
  2. Divide the sauce in half: set aside one half for basting and use the other half for marinating.

2️⃣ Marinate the Chicken

  1. Place chicken thighs in a shallow dish or zip-top bag and pour in the marinade.
  2. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.

3️⃣ Grill the Chicken

  1. Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
  2. Remove chicken from marinade and discard used marinade.
  3. Grill chicken for 5–6 minutes per side, brushing frequently with the reserved sauce.
  4. Cook until chicken reaches an internal temperature of 165°F (74°C) and is beautifully caramelized.

4️⃣ Rest & Serve

  1. Transfer chicken to a plate and let rest for 5 minutes before slicing.
  2. Serve hot with steamed rice, grilled pineapple, or a fresh tropical salad.
