👩🍳 Steps
1️⃣ Make the Marinade
- In a medium bowl, whisk together teriyaki sauce, pineapple juice, brown sugar, ketchup, soy sauce, ginger, and garlic until well combined.
- Divide the sauce in half: set aside one half for basting and use the other half for marinating.
2️⃣ Marinate the Chicken
- Place chicken thighs in a shallow dish or zip-top bag and pour in the marinade.
- Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
3️⃣ Grill the Chicken
- Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
- Remove chicken from marinade and discard used marinade.
- Grill chicken for 5–6 minutes per side, brushing frequently with the reserved sauce.
- Cook until chicken reaches an internal temperature of 165°F (74°C) and is beautifully caramelized.
4️⃣ Rest & Serve
- Transfer chicken to a plate and let rest for 5 minutes before slicing.
- Serve hot with steamed rice, grilled pineapple, or a fresh tropical salad.
