Garlic Herb Honey Butter Roasted Chicken

1️⃣ Preheat the Oven
🔥 Preheat oven to 425°F (220°C).
2️⃣ Prepare the Chicken
Remove giblets and pat chicken dry with paper towels.
Rub with olive oil, season generously with salt and pepper inside and out.
Place chicken on roasting pan or oven-safe skillet.
3️⃣ Make the Garlic Herb Honey Butter
🥣 Combine butter, honey, garlic, thyme, rosemary, parsley, lemon juice, salt, and pepper.
Mix until smooth and creamy.
4️⃣ Apply the Butter Mixture
Gently loosen chicken skin with fingers.
Rub half of butter mixture under skin (breast & thighs).
Spread remaining mixture evenly over chicken skin.
5️⃣ Roast the Chicken
Roast for 1–1½ hours until internal temp reaches 165°F (74°C).
Baste halfway with pan juices for golden finish.
Optional: roast with potatoes, carrots, or onions for one-pan meal.
6️⃣ Rest and Carve
⏳ Rest chicken 10–15 minutes before carving to retain juices.
7️⃣ Serve
Carve and serve with roasted vegetables.
Drizzle extra honey garlic butter if desired.
