1ļøā£ Prep the Chicken
- Season the chicken cubes with salt, pepper, garlic, and Italian herbs (or thyme and oregano).
2ļøā£ Cook the Chicken
- Heat 1 tablespoon olive oil in a skillet over medium-high heat.
- Add the seasoned chicken to the pan and cook for about 6ā7 minutes, or until browned and cooked through. Remove and set aside.
3ļøā£ SautĆ© the Veggies
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- First, toss in the carrots and cook for 4 minutes until they begin to soften.
- Add the onions and sautĆ© until softened and slightly charred, about 3ā4 minutes.
- Finally, add the broccoli and cook for another 2ā3 minutes until bright green and tender-crisp.
4ļøā£ Combine & Season
- Return the cooked chicken to the skillet with the vegetables.
- Add the soy sauce (or coconut aminos) and stir everything together until evenly coated and aromatic.
5ļøā£ Serve
- Serve the chicken and veggie stir-fry over a bed of warm cooked rice.
- Enjoy immediately while warm and fresh!
