Ingredients:
- 1.5 lbs (675g) baby potatoes or Yukon Gold potatoes
- 2 tbsp olive oil
- 1/2 cup (120ml) milk
- 1/4 cup (60ml) sour cream
- 1 cup (100g) shredded cheddar cheese (or your choice)
- 3 tbsp unsalted butter
- Salt and pepper to taste
- 2–3 green onions, chopped (optional garnish)
Instructions:
- Boil Potatoes: Place potatoes in a pot with salted water. Boil 15–20 minutes until fork-tender.
- Drain & Smash: Drain and return to pot. Use a masher or fork to gently smash potatoes — leave them a bit chunky.
- Add Flavor: Mix in olive oil, milk, sour cream, butter, and shredded cheese. Stir until melted and creamy.
- Season: Add salt and pepper to taste.
- Serve: Transfer to a serving dish. Garnish with green onions if desired.
