GARLIC BUTTER SHRIMP FRIED RICE

For the Fried Rice

  • 3 cups cooked rice, preferably day-old
  • 2 tbsp oil or butter
  • 2 eggs, beaten
  • ½ cup carrots, diced
  • ½ cup peas
  • 2–3 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • ½ tsp sesame oil
  • Salt & pepper, to taste

Instructions

1. Cook the Garlic Butter Shrimp

  1. Heat a large pan over medium-high heat. Add olive oil and butter.
  2. Sauté minced garlic for 10–15 seconds.
  3. Add shrimp, salt, pepper, paprika, and chili flakes.
  4. Cook about 2 minutes per side, until golden and slightly charred.
  5. Add lemon juice, toss, and remove from pan. Set aside.

2. Make the Fried Rice

  1. In the same pan, add oil or butter.
  2. Add carrots and peas; stir for 2–3 minutes.
  3. Push veggies to one side, add beaten eggs, and scramble.
  4. Add cooked rice and mix everything well.
  5. Pour in soy sauce, oyster sauce, sesame oil, salt, and pepper.
  6. Finish with chopped green onions.

3. Assemble
