For the Fried Rice
- 3 cups cooked rice, preferably day-old
- 2 tbsp oil or butter
- 2 eggs, beaten
- ½ cup carrots, diced
- ½ cup peas
- 2–3 green onions, chopped
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- ½ tsp sesame oil
- Salt & pepper, to taste
Instructions
1. Cook the Garlic Butter Shrimp
- Heat a large pan over medium-high heat. Add olive oil and butter.
- Sauté minced garlic for 10–15 seconds.
- Add shrimp, salt, pepper, paprika, and chili flakes.
- Cook about 2 minutes per side, until golden and slightly charred.
- Add lemon juice, toss, and remove from pan. Set aside.
2. Make the Fried Rice
- In the same pan, add oil or butter.
- Add carrots and peas; stir for 2–3 minutes.
- Push veggies to one side, add beaten eggs, and scramble.
- Add cooked rice and mix everything well.
- Pour in soy sauce, oyster sauce, sesame oil, salt, and pepper.
- Finish with chopped green onions.
