Fluffy Homemade Pancakes

Preparation

  1. Prepare the Dry Ingredients: Start by sifting the flour and yeast (Royal type) together in a large bowl or container. Sifting helps to remove any lumps and ensures an even distribution of the yeast, which is key to getting those fluffy pancakes. Once sifted, add the sugar and a pinch of salt, and mix everything together until well combined. The sugar will add a light sweetness to the pancakes, and the salt helps balance the flavor.
  2. Beat the Eggs: In a separate bowl, crack the eggs and beat them well with a whisk or fork. If you have an electric whisk or mixer, feel free to use it to make the process quicker and to ensure the eggs are beaten until fully combined. Adding well-beaten eggs to the mixture will help create a light texture in the pancakes.
  3. Add the Eggs to the Dry Ingredients: Pour the beaten eggs into the bowl with the dry ingredients. Stir well to incorporate the eggs into the flour mixture. The smoother and more homogeneous the batter, the better the pancakes will turn out. At this stage, you can use either a whisk or a hand mixer to ensure the mixture is lump-free and silky smooth.

  5. Incorporate the Butter: Add the softened or melted butter to the pancake mix and stir it in thoroughly. If you prefer, you can melt the butter in the microwave to make it easier to incorporate into the batter.
  6. Let the Batter Rest: Once everything is mixed well, let the batter rest for about 10-15 minutes.
