🧾 Ingredients

For the Biscuits:

  • 1 cup cottage cheese
  • 2 large eggs
  • 1¼ cups almond flour
  • 1½ tsp baking powder
  • 1 tbsp melted butter (optional for richness)
  • Pinch of salt
  • Optional: Sprinkle with cheddar or herbs before baking

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Blend Wet Ingredients: In a blender or large mixing bowl, blend the cottage cheese and eggs until smooth and fully combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the almond flour, baking powder, and salt. Stir in the blended wet mixture (and butter, if using) until the dough forms.
  4. Shape the Biscuits: Scoop the dough into 6 equal portions. Shape each portion into a round biscuit shape, placing them on the prepared baking sheet.
  5. Bake: Bake the biscuits in the preheated oven for 18–20 minutes, or until they are golden brown and firm to the touch. They should have a soft, airy texture inside.
