Easy Fruitcake Recipe

👨‍🍳 Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (165°C). Grease and flour a loaf pan, or line it with parchment paper for easier removal.
  2. Prepare the Dried Fruits and Nuts: In a bowl, combine the dried fruits and chopped nuts. Toss them with 2 tablespoons of flour to coat evenly. This helps prevent them from sinking to the bottom of the batter during baking. Set aside.
  3. Cream the Butter and Sugar: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. This will create a soft base for the cake.
  4. Add the Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Combine the Dry Ingredients: In a separate bowl, whisk together the remaining flour, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  6. Fold in the Dried Fruits and Nuts: Gently fold in the floured dried fruit and nut mixture. This ensures the fruits and nuts are evenly distributed throughout the batter.
  7. Prepare for Baking: Pour the batter into the prepared loaf pan and spread it evenly. Tap the pan gently on the counter to remove any air bubbles and smooth the top of the batter.
  8. Bake: Bake in the preheated oven for 60–70 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown and firm to the touch.
  9. Cool and Store: Allow the fruitcake to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely. Once cooled, wrap the fruitcake tightly in plastic wrap or foil and store at room temperature for several days to allow the flavors to develop.

💡 Tips & Variations

  • Add Some Booze: For an adult twist, add 2 tablespoons of rum or brandy to the batter for extra flavor.
  • Fruit Variations: Swap the dried fruits for others like apricots, cranberries, or dried pineapple for a different flavor.
  • Glaze it: For an extra touch, drizzle the fruitcake with a sugar glaze or melted chocolate before serving.
