👩🍳 Instructions
1️⃣ Make the Filling
- Heat 1 tbsp olive oil or butter in a skillet over medium heat.
- Sauté the finely chopped onion for 3–4 minutes until translucent.
- Add minced garlic and cook for another 30 seconds.
- Add the ground beef or chicken, breaking it up with a spoon as it cooks. Cook until browned and no longer pink.
- Season with paprika, salt, and black pepper. Stir in fresh parsley or green onions, if using.
- Remove from heat and let the filling cool slightly before using.
2️⃣ Prepare the Potato Dough
- In a large mixing bowl, combine mashed potatoes, egg, flour, salt, and pepper.
- Mix until a soft, slightly sticky dough forms. If the dough feels too wet to handle, sprinkle in a bit more flour until manageable.
3️⃣ Shape the Pancakes
- Lightly dust your hands and work surface with flour.
- Scoop about 2 tablespoons of the potato dough and flatten it into a 3-inch circle in your hand or on the floured surface.
- Place 1 tablespoon of the cooled meat filling into the center of the circle.
- Fold the edges over to enclose the filling and gently flatten into a patty or disk.
- Repeat until all dough and filling are used up.

4️⃣ Fry the Pancakes
- Heat oil (and optional butter) in a large skillet over medium heat.
- Working in batches, fry the stuffed pancakes for 3–4 minutes per side until golden brown and crispy.
- Transfer to a paper towel–lined plate to drain excess oil.
5️⃣ Serve
