Crispy Mashed Potato Pancakes with Savory Meat Filling

👩‍🍳 Instructions

1️⃣ Make the Filling

  1. Heat 1 tbsp olive oil or butter in a skillet over medium heat.
  2. Sauté the finely chopped onion for 3–4 minutes until translucent.
  3. Add minced garlic and cook for another 30 seconds.
  4. Add the ground beef or chicken, breaking it up with a spoon as it cooks. Cook until browned and no longer pink.
  5. Season with paprika, salt, and black pepper. Stir in fresh parsley or green onions, if using.
  6. Remove from heat and let the filling cool slightly before using.

2️⃣ Prepare the Potato Dough

  1. In a large mixing bowl, combine mashed potatoes, egg, flour, salt, and pepper.
  2. Mix until a soft, slightly sticky dough forms. If the dough feels too wet to handle, sprinkle in a bit more flour until manageable.

3️⃣ Shape the Pancakes

  1. Lightly dust your hands and work surface with flour.
  2. Scoop about 2 tablespoons of the potato dough and flatten it into a 3-inch circle in your hand or on the floured surface.
  3. Place 1 tablespoon of the cooled meat filling into the center of the circle.
  4. Fold the edges over to enclose the filling and gently flatten into a patty or disk.
  5. Repeat until all dough and filling are used up.

4️⃣ Fry the Pancakes

  1. Heat oil (and optional butter) in a large skillet over medium heat.
  2. Working in batches, fry the stuffed pancakes for 3–4 minutes per side until golden brown and crispy.
  3. Transfer to a paper towel–lined plate to drain excess oil.
