Crème Brûlée Cheesecake

1. Prepare the Crust

  1. Mix crushed biscuits + melted butter + sugar.
  2. Press into the bottom of a springform pan.
  3. Bake at 170°C (340°F) for 8 minutes. Set aside.

2. Make the Cheesecake Filling

  1. Beat cream cheese until smooth.
  2. Add sugar and mix well.
  3. Add eggs one at a time.
  4. Add cream, vanilla, and lemon juice.
  5. Pour over the crust.

3. Bake

  • Bake at 150°C (300°F) for 1 hour to 1 hour 10 minutes.
  • Turn off oven and leave cheesecake inside for 30 minutes (prevents cracking).
  • Chill in fridge at least 4 hours (overnight is best).

4. Make the Crème Brûlée Top
