Creamy Sun-Dried Tomato Chicken Pasta

For the Pasta:

  • ½ pound penne pasta, cooked and drained according to package directions
  • 1 ½ tablespoons olive oil
  • 2 large boneless skinless chicken breasts, cut into 1-inch bite-sized pieces (approximately 1 ½ pounds)
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 8.5 ounces sun-dried tomatoes, julienne cut and packed in oil (approximately 1 cup)
  • 1 teaspoon Italian seasoning blend
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons fresh chopped basil leaves, divided (2 tablespoons mixed into sauce, 1 tablespoon for garnish)
