Peel and cube the potatoes, then boil them in a large pot of salted water for about 15 minutes, or until fork-tender.
Drain the potatoes and return them to the pot. Mash with butter and warm milk until smooth and creamy. Season with salt to taste.
Cover the mashed potatoes to keep them warm while you prepare the shrimp and sauce.
2️⃣ Cook the Shrimp
Toss the shrimp with olive oil, paprika, garlic powder, salt, and pepper.
Heat a skillet over medium-high heat and sear the shrimp for 2–3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
3️⃣ Make the Garlic Cream Sauce
In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and Dijon mustard (if using), and simmer for 3–5 minutes, or until the sauce slightly thickens.
Adjust seasoning with salt and pepper to taste.
4️⃣ Serve
Serve the mashed potatoes topped with the cooked shrimp and a generous spoonful of garlic cream sauce.
