Creamy Cajun Chicken and Sausage Pasta Skillet

Instructions

  1. Boil the penne pasta according to package directions. Once cooked, drain the pasta and reserve 1 cup of the cooking water. This starchy water can be used later to adjust the sauce consistency. Set the pasta aside while preparing the rest of the dish.
  2. Toss the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Make sure each piece is evenly coated to ensure a flavorful, well-seasoned result.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5–6 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the pan and set aside to keep warm.
  4. In the same pan, sear the sausage slices for 3–4 minutes until browned on both sides. This adds depth of flavor. Remove and set aside with the chicken.
  5. Melt the butter in the pan over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Pour in the chicken stock and deglaze the pan by scraping up the browned bits from the bottom. These bits add rich flavor to the sauce.
  6. Stir in the heavy cream and shredded Parmesan cheese. Simmer the mixture for about 5 minutes until the sauce thickens slightly, stirring occasionally to ensure smooth consistency and prevent sticking.
  7. Add the cooked chicken, sausage, and drained pasta back into the skillet. Toss everything together to coat evenly in the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
  8. Simmer for another 2–3 minutes to allow the flavors to meld together. Taste and adjust seasoning if necessary.
  9. Remove from heat, garnish with freshly chopped parsley, and serve hot. This creamy Cajun pasta is best enjoyed immediately for maximum flavor and a perfectly saucy texture.

Serving and Storage

Serve as a hearty main course with crusty bread or a simple green salad. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or reserved pasta water to restore the creamy consistency.
