Instructions

Step 1: Prepare the Salad Ingredients

  1. Boil the eggs for about 10 minutes, then let them cool in ice water before peeling and chopping into small pieces.
  2. Dice the tomatoes and cucumber, finely chop the green onions and parsley, and thinly slice the white onion.
  3. Combine all ingredients in a large mixing bowl.

Step 2: Make the Creamy Avocado Dressing

  1. In a blender or food processor, combine:
    • Avocado
    • Greek yogurt (or mayonnaise)
