2️⃣ Mix the Batter
- In a medium mixing bowl, add 2 cups self-rising cornmeal.
- Add in the 2 eggs and 1 cup buttermilk. Stir to form a batter that is slightly thin—add more buttermilk as needed to adjust the consistency.
- Fold in the 1 cup pork cracklins and stir until evenly distributed.
- Pour the melted bacon grease from the skillet into the batter and stir again to combine.
3️⃣ Bake
- Carefully pour the batter back into the hot skillet. Use a spatula to spread it out evenly.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the top is lightly golden brown and set in the center.
4️⃣ Cool & Serve
- Remove from the oven and run a butter knife around the edges to loosen the bread from the skillet.
- Invert the skillet carefully to release the bread onto a serving plate.
- Serve warm with butter, and enjoy with soups, greens, or on its own as a savory treat.
