Crackling Cornbread – A Southern Classic with a Savory Crunch

2️⃣ Mix the Batter

  1. In a medium mixing bowl, add 2 cups self-rising cornmeal.
  2. Add in the 2 eggs and 1 cup buttermilk. Stir to form a batter that is slightly thin—add more buttermilk as needed to adjust the consistency.
  3. Fold in the 1 cup pork cracklins and stir until evenly distributed.
  4. Pour the melted bacon grease from the skillet into the batter and stir again to combine.

3️⃣ Bake

  1. Carefully pour the batter back into the hot skillet. Use a spatula to spread it out evenly.
  2. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the top is lightly golden brown and set in the center.

4️⃣ Cool & Serve

  • Remove from the oven and run a butter knife around the edges to loosen the bread from the skillet.
  • Invert the skillet carefully to release the bread onto a serving plate.
  • Serve warm with butter, and enjoy with soups, greens, or on its own as a savory treat.
