Cookies and Cream Layer Cake with Mousse and Ganache

Chocolate Ganache

  1. Place the dark chocolate in a bowl. Heat the heavy cream and pour it over the chocolate.
  2. Stir gently until the mixture is smooth and glossy. Let it sit for 10–15 minutes to thicken slightly before applying to the cake.

Assembling the Cake

  1. Place the first cake layer on a serving stand. Optionally brush with sugar syrup to add moisture.
  2. Pipe a border of frosting around the edge to create a barrier for the mousse.
  3. Spread a generous layer of cookies & cream mousse in the center.
  4. Repeat for the remaining layers, assembling each with frosting edges and mousse
