Chocolate Ganache
- Place the dark chocolate in a bowl. Heat the heavy cream and pour it over the chocolate.
- Stir gently until the mixture is smooth and glossy. Let it sit for 10–15 minutes to thicken slightly before applying to the cake.
Assembling the Cake
- Place the first cake layer on a serving stand. Optionally brush with sugar syrup to add moisture.
- Pipe a border of frosting around the edge to create a barrier for the mousse.
- Spread a generous layer of cookies & cream mousse in the center.
- Repeat for the remaining layers, assembling each with frosting edges and mousse
