Pat the chicken breasts dry and season both sides with salt, black pepper, and garlic powder.
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan.
Dredge each chicken breast in the flour, shaking off excess, then dip in the egg, and finally press into the breadcrumb-Parmesan mixture until well coated. Set aside.
2️⃣ Fry the Chicken:
Heat olive oil and butter in a large skillet over medium-high heat.
Once hot, add the breaded chicken breasts and fry for 4–5 minutes per side, or until golden brown and crispy.
Transfer the cooked chicken to a paper towel-lined plate to drain any excess oil.
3️⃣ Assemble the Dish:
Spread ½ cup of marinara sauce in the bottom of a 9×13-inch baking dish.
Arrange the fried chicken breasts on top of the sauce.
Spoon the remaining marinara sauce evenly over each piece of chicken.
Top each with shredded mozzarella and a sprinkle of the remaining Parmesan cheese.
Sprinkle dried oregano over the top for added flavor.
