Make the Dough:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until smooth and fluffy.
- Mix in the vanilla extract.
- Gradually add flour and salt, mixing until a soft, crumbly dough forms.
- Stir in the finely chopped pecans or walnuts.
Shape and Bake:
- Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
- Bake for 12–15 minutes, until the bottoms are lightly golden but the tops remain pale.
Coat in Cinnamon Sugar:
- While cookies are still warm, mix together the granulated sugar and cinnamon in a shallow bowl.
- Roll each warm cookie in the cinnamon sugar to coat evenly.
- Let cool slightly, then optionally roll in powdered sugar for that classic « snowball » look and extra sweetness.
