  1. Prep the Cinnamon Rolls: Start by cutting each cinnamon roll into 6–8 bite-sized pieces. This makes the rolls easier to dip and cook, while ensuring that every bite gets a good amount of flavor. Set aside the icing that comes with the cinnamon rolls to drizzle later for extra sweetness.
  2. Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon (if using). The cinnamon adds a warm spice, complementing the cinnamon rolls for a deeper flavor. Whisk well until everything is fully combined, ensuring the mixture is smooth and ready for dipping.
  3. Coat the Bites: Dip each cinnamon roll bite into the egg mixture, allowing it to soak for a few seconds. Be careful not to over-soak, as you want the pieces to be coated but not soggy. The egg mixture will create a rich, custardy coating as they cook, enhancing the cinnamon flavor.
  4. Cook: You have two cooking options:
    • Skillet Method: Heat a non-stick skillet or griddle over medium heat and add butter or oil. Once heated, cook the bites for 2–3 minutes per side until golden brown and cooked through. Keep an eye on them to prevent burning, adjusting the heat as necessary for even cooking.
    • Oven Method: Preheat your oven to 375°F (190°C). Arrange the cinnamon roll bites on a greased baking sheet and lightly spray them with cooking spray. Bake for 12–15 minutes, turning them halfway through for even browning. The bites should be golden and slightly crispy on the outside while remaining soft on the inside.
  5. Serve: Once cooked, drizzle the reserved icing over the bites for an extra touch of sweetness, or serve with maple syrup for a classic flavor. You can also add a cream cheese glaze for a rich, indulgent topping. For an added touch of freshness, sprinkle with powdered sugar or top with fresh fruit like berries or sliced bananas.
