Instructions:
- Prepare the Truffle Filling: In a medium-sized mixing bowl, beat the softened 8 oz cream cheese until smooth. Gradually add the 2 cups powdered sugar and continue mixing until fully combined and creamy.
- Add the Cookie Crumbs: Stir in the 2 cups of crushed chocolate cookies or graham crackers and 1 teaspoon of vanilla extract. Mix until the mixture comes together and forms a smooth dough-like consistency. The crushed cookies give the truffles their signature texture and flavor.
- Shape the Truffles: Use your hands to roll the truffle mixture into small balls, about 1-inch in diameter. You should get around 20-24 truffles depending on the size. Place the truffles on a baking sheet lined with parchment paper.
- Chill the Truffles: Refrigerate the truffles for about 30 minutes to firm up. This will help them hold their shape when dipped in chocolate and make them easier to handle.
- Prepare the Chocolate Coating: While the truffles are chilling, melt your choice of chocolate. You can use white chocolate, milk chocolate, or dark chocolate. To melt, you can either use a double boiler or microwave the chocolate in 30-second intervals, stirring each time until smooth.
- Coat the Truffles: Once the truffles have chilled, dip each one into the melted chocolate, coating them completely. Use a fork or a dipping tool to help handle the truffles. After dipping, place the truffles back on the parchment paper and let the excess chocolate drip off.
- Add Holiday Sprinkles: Before the chocolate coating sets, immediately sprinkle the truffles with colorful holiday sprinkles, or you can use red, green, and white sugar crystals for that festive touch. This step adds a pop of color and a festive flair to your truffles.
- Let Set: Allow the truffles to sit at room temperature for 15–30 minutes or refrigerate them to help the chocolate set faster. Once set, they are ready to enjoy!
