Christmas Chocolate Truffle Bites

Instructions:

  1. Prepare the Truffle Filling: In a medium-sized mixing bowl, beat the softened 8 oz cream cheese until smooth. Gradually add the 2 cups powdered sugar and continue mixing until fully combined and creamy.
  2. Add the Cookie Crumbs: Stir in the 2 cups of crushed chocolate cookies or graham crackers and 1 teaspoon of vanilla extract. Mix until the mixture comes together and forms a smooth dough-like consistency. The crushed cookies give the truffles their signature texture and flavor.
  3. Shape the Truffles: Use your hands to roll the truffle mixture into small balls, about 1-inch in diameter. You should get around 20-24 truffles depending on the size. Place the truffles on a baking sheet lined with parchment paper.
  4. Chill the Truffles: Refrigerate the truffles for about 30 minutes to firm up. This will help them hold their shape when dipped in chocolate and make them easier to handle.
  5. Prepare the Chocolate Coating: While the truffles are chilling, melt your choice of chocolate. You can use white chocolate, milk chocolate, or dark chocolate. To melt, you can either use a double boiler or microwave the chocolate in 30-second intervals, stirring each time until smooth.
  6. Coat the Truffles: Once the truffles have chilled, dip each one into the melted chocolate, coating them completely. Use a fork or a dipping tool to help handle the truffles. After dipping, place the truffles back on the parchment paper and let the excess chocolate drip off.
  7. Add Holiday Sprinkles: Before the chocolate coating sets, immediately sprinkle the truffles with colorful holiday sprinkles, or you can use red, green, and white sugar crystals for that festive touch. This step adds a pop of color and a festive flair to your truffles.
  8. Let Set: Allow the truffles to sit at room temperature for 15–30 minutes or refrigerate them to help the chocolate set faster. Once set, they are ready to enjoy!
