- Marinate the Chicken:
In a medium bowl, combine the thinly sliced chicken breast with 1 tablespoon cornstarch, soy sauce, rice vinegar, grated garlic, and grated ginger. Mix thoroughly until the chicken is evenly coated. Let the mixture sit at room temperature for about 15 minutes to tenderize and absorb the flavors.
- Prepare the Sauce:
In a small bowl, whisk together the soy sauce, teriyaki sauce, sweet chili sauce, sesame oil, and 1 teaspoon of cornstarch. Stir until smooth and set aside. This sauce will thicken slightly when heated, creating that signature glossy stir-fry finish.
- Cook the Chicken:
Heat 2 tablespoons of oil in a large skillet or wok over high heat. Once the oil is shimmering hot, add the marinated chicken in a single layer. Cook for 2–3 minutes, stirring occasionally, until the chicken is just cooked through and lightly browned. Remove the chicken from the pan and set aside.
