- Preheat oven:
Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Season the chicken:
Place chicken breasts in the baking dish and season both sides generously with salt, pepper, and garlic powder.
- Top with veggies and cheese:
Arrange zucchini slices on top of each chicken breast. Sprinkle with shredded mozzarella cheese and turkey bacon bits.
- Bake:
Bake uncovered for 25–30 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F / 74°C) and the cheese is melted and bubbly.
- Garnish and serve:
Let rest for a few minutes. Garnish with chopped chives, if desired, and serve hot with a side of steamed greens or cauliflower rice.
