- Combine ingredients: In the baking pan, add the diced potatoes, shredded cheddar cheese, crumbled bacon, minced garlic, and chopped onion.
- Add mayo: Spoon in the mayonnaise and mix thoroughly until everything is evenly coated and well distributed throughout the pan.
- Bake: Bake uncovered for 1.5 hours, or until the potatoes are fork-tender and the top is golden and bubbling.
- Rest & Serve: Allow the casserole to rest for 5–10 minutes before serving hot so it sets slightly and becomes easier to plate.
