1. Make the Crust
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until the texture resembles wet sand.
- Spoon a small amount into each cup of a mini muffin tin, silicone mold, or bite-sized dessert cup. Press firmly to form a compact crust. Set aside.
2. Make the Cheesecake Filling
- In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Add the heavy cream and vanilla extract. Continue beating until the mixture is light, fluffy, and slightly thickened.
3. Assemble the Layers
- Spoon a small amount of vanilla pudding over each graham cracker crust layer.
- Top with a banana slice.
- Add a generous layer of the cheesecake mixture, smoothing the top.
4. Coat and Chill
- Gently press each bite into crushed Nilla wafers to coat the top or sides, adding crunch and classic banana pudding flavor.
- Refrigerate the assembled bites for at least 2 hours or until firm and well set.
5. Garnish and Serve
