Cassava and Coconut Cake – Moist, Rustic & Naturally Gluten-Free

👨‍🍳 Preparation

1️⃣ Cream the Base:

  1. In a large mixing bowl, beat the eggs, softened butter, and sugar together using a hand mixer or whisk until the mixture becomes light, pale, and creamy.

2️⃣ Add the Cassava & Coconut:

  1. Add the grated raw cassava to the bowl. Stir in the coconut milk and grated coconut.
  2. Mix thoroughly until fully combined. The batter will be thick and slightly sticky.

3️⃣ Add Leavening:

  1. Sprinkle in the baking powder and gently fold it into the batter just until incorporated. Avoid overmixing at this stage.

4️⃣ Bake:

  1. Preheat your oven to 180°C (350°F).
  2. Grease and flour a medium rectangular or round baking pan (or line with parchment).
  3. Pour the batter into the prepared pan and smooth the surface with a spatula.
  4. Bake for 40–50 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
