👨🍳 Preparation
1️⃣ Cream the Base:
- In a large mixing bowl, beat the eggs, softened butter, and sugar together using a hand mixer or whisk until the mixture becomes light, pale, and creamy.
2️⃣ Add the Cassava & Coconut:
- Add the grated raw cassava to the bowl. Stir in the coconut milk and grated coconut.
- Mix thoroughly until fully combined. The batter will be thick and slightly sticky.
3️⃣ Add Leavening:
- Sprinkle in the baking powder and gently fold it into the batter just until incorporated. Avoid overmixing at this stage.
4️⃣ Bake:
- Preheat your oven to 180°C (350°F).
- Grease and flour a medium rectangular or round baking pan (or line with parchment).
- Pour the batter into the prepared pan and smooth the surface with a spatula.
- Bake for 40–50 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
