👨🍳 Directions
- Prepare the Candy Dough: In a saucepan, combine the sweetened condensed milk, shredded coconut, and margarine. Stir well and cook over low heat, constantly stirring, until the mixture thickens and starts to pull away from the bottom of the pan. This should take about 10–15 minutes. The texture should be similar to brigadeiro (firm but not too sticky).
- Cool and Shape the Candy: Once the dough has thickened, remove from heat and allow it to cool for a few minutes. Roll the mixture into small balls with your hands. Place the balls on a parchment-lined surface and set them aside to firm up.
- Prepare the Syrup: In another saucepan, combine the sugar and vinegar. Cook over low heat without stirring until the sugar dissolves and the syrup thickens slightly. Allow the syrup to cook until it turns a golden amber color, which indicates it has reached the « light caramel » stage. Be careful not to overcook, as it can burn quickly.
- Dip the Candies: While the syrup is still hot, quickly dip each coconut ball into the caramel syrup, coating them evenly. Work fast, as the syrup will begin to cool and thicken.
- Let the Candy Set: Place the coated candies on a greased surface or parchment paper. Allow them to cool and crystallize. The syrup will harden as it cools, creating a delicious, sweet crunch on the outside of the coconut balls.
- Serve: Once fully set, enjoy your homemade Bahian coconut candies! They make a perfect treat or gift for loved ones.
💡 Tip: For extra flavor, try adding a small amount of vanilla extract or cinnamon to the coconut mixture before cooking!
