Blueberry Cheesecake Crumb Cake

  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, cold and diced

👨‍🍳 Instructions

1️⃣ Prepare the Baking Pan

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish or line with parchment paper for easy removal.

2️⃣ Make the Crust

  1. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until evenly moistened.
  2. Press the mixture firmly into the bottom of the prepared pan.
  3. Set aside while you prepare the cheesecake layer.

3️⃣ Make the Cheesecake Layer

  1. In a large mixing bowl, beat cream cheese and sugar until smooth and fluffy.
  2. Add eggs one at a time, mixing well after each addition.
  3. Mix in vanilla extract.
  4. Pour and spread the cheesecake mixture evenly over the graham cracker crust.

4️⃣ Add the Blueberry Layer

  1. In a separate bowl, toss blueberries with sugar and cornstarch until coated.
  2. Spoon the berry mixture evenly over the cheesecake layer.

5️⃣ Make the Crumb Topping

  1. In a bowl, combine flour, brown sugar, granulated sugar, and cinnamon.
  2. Cut in the cold, diced butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  3. Sprinkle the crumb mixture evenly over the blueberries.
