- Preheat the oven: Set the oven to 180°C (350°F). If using a gas oven that typically runs hot, this temperature works well; for an electric non–fan-forced oven, you can increase to 200°C (390°F). Allow the oven to fully preheat so the pastry puffs evenly as soon as it enters the heat.
- Add honey to the pastry: Lay each square puff pastry sheet flat on baking paper. Drizzle 1 tablespoon of honey over each sheet, spreading it as evenly as possible. The warmth of the room will help the honey soften into the surface. This thin layer adds gentle sweetness that contrasts beautifully with the savory cheeses.
- Add cheeses, nuts, and herbs: Divide the chopped walnuts, crumbled blue cheese, and grated Parmesan between both sheets. Scatter them evenly so every section gets a balanced mix. Sprinkle fresh thyme leaves over the top, letting them fall naturally between the layers. Season lightly with sea salt and cracked pepper, keeping in mind that both cheeses already contribute saltiness.
- Roll and slice the sheets: Starting from one edge of each prepared sheet, roll the pastry tightly into a log, keeping the filling tucked inside. Once rolled, cut each log lengthways down the center to create two long halves. After cutting, gently tuck any loose filling back into the pastry layers to preserve structure and prevent loss during shaping.
