- Preheat Oven: Set oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- Mix Ingredients: In a large bowl, combine frozen hashbrowns, diced onion, melted butter, cream of chicken soup, sour cream, 1 cup shredded cheddar cheese, salt, and pepper. Mix until evenly combined.
- Transfer to Dish: Spread the mixture evenly into the prepared baking dish, pressing lightly to level.
- Optional Cornflake Topping: For a crispy golden finish, sprinkle the crushed cornflakes evenly across the top before baking.
- Bake: Bake uncovered for 45–50 minutes, until hot and bubbling and the top is golden.
- Final Cheese Layer: Remove from oven, sprinkle remaining 1 cup cheddar cheese on top, and return to oven for 5–10 minutes until the cheese melts and is gooey.
- Cool and Serve: Let cool for 5–10 minutes before serving to allow it to set slightly. Serve warm and enjoy!
