Baked Oatmeal with Carrots and Fruits

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Prepare Oats: Place the rolled oats in a blender and chop until they reach a fine consistency.
  3. Mix Dry Ingredients: In a large bowl, combine the chopped oats and baking powder. Mix well.
  4. Add Wet Ingredients: Add the milk, grated carrot, rinsed dried apricots, rinsed raisins, diced apple, cinnamon, eggs, stevia (or other sweetener), vanilla extract, and olive oil. Mix until everything is well combined.
  5. Pour into Casserole Dish: Grease an 18 cm casserole dish and pour the mixture into it, spreading it evenly.
  6. Bake: Bake in the preheated oven for about 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow to cool slightly before slicing. Serve warm or at room temperature.
