Baked Lemon Garlic Chicken Drumsticks with Roasted Baby Potatoes Recipe

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Chicken Drumsticks:
    In a large bowl, combine the olive oil, lemon juice, minced garlic, lemon zest, and dried thyme. Add the chicken drumsticks and toss until they are evenly coated with the marinade. Let the drumsticks marinate for at least 15-20 minutes to allow the flavors to soak in (or longer if you have time).
  3. Prepare the Baby Potatoes:
    While the chicken is marinating, prepare the baby potatoes. Cut them in half or quarters, depending on their size. Place the potatoes on the baking sheet and drizzle with olive oil. Season with salt and pepper, tossing them to coat evenly. Spread them out in a single layer for even roasting.
  4. Assemble and Bake:
    Arrange the marinated chicken drumsticks on the same baking sheet with the baby potatoes. Ensure that the chicken is placed in between the potatoes to allow both to cook evenly. Bake in the preheated oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy on the outside.
  5. Serve:
    Once the chicken drumsticks are fully cooked and the potatoes are tender, remove from the oven. Serve the baked lemon garlic chicken drumsticks with the roasted baby potatoes on the side. Garnish with fresh herbs or extra lemon zest if desired.
