- Preheat oven to 400°F (200°C).
- Prepare the squash:
- Cut each acorn squash in half lengthwise and scoop out the seeds and stringy flesh.
- Place cut-side up on a baking sheet lined with parchment paper or foil.
- Mix the filling: In a medium bowl, stir together the diced apples, brown sugar, chopped pecans, cinnamon, and nutmeg until well coated and fragrant.
- Stuff the squash: Spoon the apple mixture evenly into each squash cavity, packing it slightly to ensure it fills the space.
- Drizzle with butter: Pour the melted butter evenly over the filled squash halves to promote caramelization and moisture.
- Bake: Roast in the preheated oven for 45–50 minutes, or until the squash is fork-tender and the filling is bubbling and golden.
- Serve: Let cool for 5–10 minutes before serving. Enjoy warm on its own or with a dollop of whipped butter or drizzle of maple syrup for a sweeter finish.
