Prepare the Coconut Mixture

  1. In a bowl, combine the shredded coconut, powdered sugar, melted coconut oil, vanilla extract, and salt. Stir thoroughly until the mixture is evenly moistened and holds together when pressed between your fingers. The coconut oil helps bind the mixture as it chills, giving the bites their soft yet stable texture.

Form the Bites

  1. Take a spoonful of the coconut mixture and form it into a small ball using your hands. Roll gently to compact the mixture, then flatten slightly to create a sturdy base for dipping.
  2. Press one whole almond into the center of each shaped coconut bite, nestling it securely so it remains in place during dipping. Repeat the process with the remaining mixture.

Chill

  1. Place the coconut–almond bites onto a parchment-lined baking sheet. Chill them in the refrigerator for at least 30 minutes. This step firms the shapes and ensures they maintain structure when dipped into warm chocolate.
